Bumbu Rajang

Balinese recipe basic marination for grill or steaming meat dishes.

Bahan-bahan yang dibutuhkan

40 gr Garlic - peeled

70 gr Shallot - peeled

50 gr Galangal (Laos)

20 gr Turmeric (Kunyit)

10 gr Leser Galangal (Kencur)

20 gr Candlenut (Kemiri)

25 gr Ginger (Jahe)

15 gr Red Chili - seeded

8 gr Hot Chili

5 gr Black Pepper Corn - roasted

50 gr Lemongrass -clean

3 gr Coriander Seed - roasted

10 gr Shrimp Paste

3 gr Kafir Lime Leaf - chopped fine

5 gr Salt

200 ml Coconut Oil or Salad Oil

Langkah-langkah

1 Cleaned and peeled all ingredients.

2 Chopped every single ingredient finely, except black pepper and coriander seed to be crushed.

3 Mixed all ingredient together in large bowl.

4 Heat the 200 ml oil than pour the ingredient mixture.

5 Stirred slowly and cooked for about 45 minutes.

6 Seasoning.

7 Keep in sterilized jar in the chiller.

8 Bumbu Rajang can used for marination the meat or poultry before grilling or baking. Happy Cooking.
