120 gr Tuna
70gr Avocado
20 ml Coconut Milk
20 ml Cream
10 gr Butter
20 gr Tomato
10 gr Pineapple
10 gr Strawberry
10 gr Onion
10 gr Cilantro
20gr Lime
5 gr Jalapeno
5 gr Ginger
15gr Honey
60 gr Sweet soya
5 gr Cinnamon stick
5 gr Star anise
20 ml Balsamic vinegar
50 ml Olive oil
100 ml Water
Nasturtium Microgreen
Red Vein Sorrel Microgreen
Red Cabbage Microgreen
Frisee Lettuce
Langkah-langkah
1 Seared Tuna with Butter and Olive oil until Medium Rare.
2 Avocado Puree. Blend with hand blender, Avocado, coconut milk and Cream and season with salt and Honey until form a smooth puree.
3 To make Tropical Pico De Gallo ,Cut into fine dice tomato, pineapple, strawberry, jalapeno and onion. Put a lime juice and chopped cilantro.
4 Reduction. Put water, ginger, honey, cinnamon stick, star anise, balasmic vinegar and salt. Then Reduce it.
5 Garnish with Microgreens.
6 Ready to serve.
